Ingredients

Scale

200g Eat Curious Pieces

600ml water

400g onions

400g peppers

100g garlic puree

50g ginger puree

100g fresh coriander

300g Thai green curry paste

800g low fat canned coconut milk

Instructions

  1. Hydrate Eat Curious Dehydrated Pieces using 1 part Pieces: 3 parts cold water (or stock): For this recipe, add 200g Eat Curious Dehydrated Pieces to a gastronorm tray or food-grade container. Add 600ml water and stir well to fully submerge. We recommend adding a small amount of gravy browning or some stock to the rehydration liquid to help colour the pieces. Cover and leave to hydrate for a minimum of 30 minutes. Overnight hydration (chilled) is recommended for best yield and texture. Drain any excess liquid before using.
  2. Cook onions and peppers for 5 minutes.
  3. Add the hydrated Eat Curious Pieces.
  4. Add Thai paste, garlic and ginger and cook for a further 2 minutes.
  5. Add coconut and simmer for 5 minutes.
