Ingredients
50g Eat Curious Dehydrated Mince (add more for a protein-boost!)
150ml water
4tbsp coconut oil
325g dried dates
25g desiccated coconut
1tbsp vanilla essence
20g goji berries
60g cocoa powder
20g acai berries, freeze-dried
Instructions
- Rehydrate Eat Curious Dehydrated Mince: Soak 50g Eat Curious Dehydrated Mince in 150ml water in a gastronorm tray for at least 30 minutes. Drain excess water.
- Cook Dehydrated Mince: Coat in oil and cook in an oven at 180°C until core temperature is reached. Set aside to chill.
- Soften dates: Add dates to microwave for roughly 30 seconds until soft.
- Make power balls: Add all ingredients (except desiccated coconut) and combine. Blend to a coarse dough in a food processor until ingredients are well mixed but still retain structure. Scrape the sides of the blending bowl a few times in the process.
- Freeze power balls: Transfer the mix to a lined square tray, flatten and set in freezer.
- Shape power balls: Cut into 2.5cm cubes and cover in shredded coconut. Roll into a ball shape and serve. You can alternatively roll in cocoa powder or cut into larger bar shapes.
