Ingredients

Scale

200g Eat Curious Dehydrated Mince

600ml water

300g mixed peppers

50g garlic puree

30g lemon juice

100g basil

300g green beans

100g light soy sauce

50g vegetable oil

20g red chilli peppers

100g shallots

30g brown sugar

800g jasmine rice

2l water

Instructions

  1. Hydrate Eat Curious Dehydrated Mince using 1 part Mince: 3 parts cold water (or stock): For this recipe, add 200g Eat Curious Dehydrated Mince to a gastronorm tray or food-grade container. Add 600ml water and stir well to fully submerge. We recommend adding gravy browning to the rehydration liquid to help colour the mince. Cover and leave to hydrate for a minimum of 30 minutes. Overnight hydration (chilled) is recommended for best yield and texture. Drain any excess liquid before using.
  2. Cook jasmine rice according to package instructions.
  3. Heat oil in wok, add garlic and chilies, stir-fry for 30 seconds.
  4. Add rehydrated Eat Curious mince, stir for 2 minutes.
  5. Add shallots, peppers, and green beans, stir-fry for 5 minutes.
  6. Add soy sauce, sugar, and lime juice. Stir in basil leaves, cook until wilted.
  7. Serve over jasmine rice.
